ĦE     Slavery still exists in the South. It contributes a factor in their cooking style. Since the slaves do not have their own refrigerator, they make use of some natural preservatives to let their food stay loner.

They are used to store large amounts of fat, salt and sugar in seasoning their food. This is also one of the highlights of Soul Food. With the use of the natural preservatives, these slaves maintain a healthy life.

The big test for the slaves in the South is to maintain the traditional flavor that reduces heart risks.

ĦE     Until now, Southern cooking style is believed to be handed down by word or mouth. They are not use to buy measuring cups or even weighing scales, they measure the amount of ingredients that they will place on the recipe will vary on their senses. Simply, they follow the steps Ħ§a pinch of this and a sprinkle of thatĦ¨.

ĦE     Another peculiar style about their cooking, they will also know whether the food is already cooked by determining its color and the sound that it produces. In frying particularly, you will know if it is cooked if it has golden brown color.
